#NOURISH: The "Quick Change" 5 Ingredient Salad
Aj | FEB 1

In the theatre, a "Quick Change" happens in the wings. An actor has thirty seconds to strip off a tuxedo and put on a pirate costume before running back on stage. It is chaotic, fast, and essential.
This salad is your culinary Quick Change. It is designed for those days when you have limited time between work and your yoga practice. No cooking, no complex dressing, just five ingredients that are ready to perform immediately.
Prep Time: 8 mins
Cook Time: 0 mins
Yields: 2 Servings
Dietary: Vegan, Gluten-Free, Nut-Free
1 can (400g) Chickpeas (Rinsed and drained. The protein powerhouse).
1/2 Punnet Cherry Tomatoes (Halved for sweetness).
2 "Cuke" Cucumbers (Diced for crunch).
1/4 Red Onion (Finely chopped for bite).
1/2 cup Fresh Parsley (Roughly chopped. Do not skip; this is the flavor).
Splash of Balsamic Vinegar (The acid).
Squeeze of Lemon Juice (The brightness).
Salt & Black Pepper (To taste).
Set the Stage: Rinse your chickpeas thoroughly under cold water until the water runs clear. Shake them dry.
The Chop: Chop your tomatoes, cucumbers, and onion into roughly the same size so every bite is balanced.
The Mix: Dump all five main ingredients (The Cast) into a large bowl.
The Dress: Add your supporting roles directly to the bowl: a splash of balsamic, a squeeze of lemon, and a pinch of salt and pepper.
The Toss: Mix well and serve immediately.
Meal Prep Hero: This salad actually tastes better the next day after the flavors mingle. Make a double batch for tomorrow's lunch.
Texture Boost: For an extra layer of crunch, toss in a handful of Roasted Chickpeas (see the "Anti-Party" Snack article) just before serving.
Flavor Boost: If you aren't strictly plant-based, crumble in some feta cheese for a salty, creamy kick.
