#NOURISH: The Signature "1:1" Tofu

THE SNAPSHOT

  • Focus: High-protein nutrition, flavor saturation, efficient meal preparation.

  • The "Why": Tofu is a versatile "blank canvas" for plant-based protein. This signature method uses a simple 1:1 ratio to build deep flavor, while the "air-fryer broil" technique ensures the marinade reduces into a rich, succulent glaze rather than evaporating.

THE PRE-PRODUCTION

These steps are optional but recommended for a professional result:

  1. The Boil: Place the whole block of tofu in a pot of boiling water for 2–3 minutes. This heat "pre-sets" the protein, tightening the structure to ensure a superior final texture.

  2. The Press: Drain and wrap the warm tofu in paper towels or a clean tea towel. Place a heavy book or pot on top for 15 minutes to express internal moisture. This allows the tofu to "absorb the script" (the marinade) more effectively.

THE CAST

Tofu Selection:

  • Firm or Extra-Firm: Best for structural integrity and a "meaty" bite.

  • Medium Tofu: Offers a silky softness that partially melts during the cook.

The 1:1 Marinade: For each 400g of tofu, whisk together one level tablespoon of each:

  • Apple Cider Vinegar (The Zip)

  • Sriracha (The Heat)

  • Raw Honey or Maple Syrup (The Glow)

  • Olive Oil (The Texture)

  • Tamari or Soy Sauce (The Depth)

THE CHOREOGRAPHY

  1. Preparation: Slice your pressed tofu into uniform pieces (cubes or batons).

  2. The Soak: Place the tofu in a bowl or Ziploc bag and add the marinade. Ensure the tofu is refrigerated for at least 30 minutes (overnight is best) to allow the flavor to penetrate the core.

  3. The Performance: Empty the tofu and all of the marinade into a small glass oven-proof dish. Place the dish into the Air Fryer at 200°C.

  4. Timing: Cook for 8–10 minutes. This higher heat caramelizes the sugars into a tacky glaze while keeping the tofu succulent. (Cook longer only if you prefer a much firmer, rubbery texture).

  5. The Stage: While the tofu cooks, grate a fresh bed of Carrot, Cucumber, and Celery.

  6. The Encore: Place the hot tofu onto the raw vegetable bed and pour all remaining "hot juice" from the glass dish over the top to season the greens.

THE DIRECTOR'S NOTE

Modifications & Handling:

  • No Air Fryer? No problem. Cook the tofu and its marinade in a saucepan over medium heat. Stir gently until the liquid reduces and the tofu is beautifully caramelized.

  • The Batching Hack: For maximum efficiency, prepare several blocks at once. Divide portions into individual Ziploc bags with the marinade and store in the fridge for up to 5 days.

  • The "Dry Stage" Fix: Avoid cooking directly on the air fryer rack. The glass dish is essential to "braise" the tofu in a reduction sauce.

  • Vegan Edit: Substitute the honey for Maple Syrup for a 100% plant-based version.

  • Storage: Marinated tofu bags keep perfectly in the fridge for up to 5 days.
